Easy Cook Fried Chicken with Cashew Nuts

Ingredients
– 600g chicken breast (filet)
– 150g of plain cashew nuts
– 2 tbsp (table spoon) liquid honey
– cooking oil
– 2 tbsp (table spoon) lime juice
– 1 spring onion
– 20g fresh ginger (3cm)
– 1 clove of garlic
– 1 large red pepper or 2 small
– 3 tbsp balsamic vinegar
– 1 small red pepper
– 1 tsp starch (corn or potato)
– 6 tbsp soy sauce
– 1 dl of water
Directions :
1) Cut the chicken into cubes of about 2 to 3 cm. Set aside in a container. Put all of the following ingredients together in another container: cut the pepper in half lengthwise, remove the center and cut it into strips. Remove about 5 cm from the leaves of the spring onion and cut it into thin rings.
Put with the pepper. Cut the garlic clove into small pieces. Peel the ginger and mince it finely. Cut the small red pepper in half lengthwise, remove the seeds with a small knife and finely mince. Reserve.
2) In a frying pan, heat a drizzle of oil and sear the chicken and cashews over high heat, mixing for 5 minutes. Then add 2 table spoon soy sauce and honey. Caramelize another 5 to 7 minutes, still mixing and set aside in a container. There should hardly be any juice left and the chicken and cashews should be golden.
3) In the same pan, add a little cooking oil to heat and add the vegetables. Fry them for 3 minutes over medium heat then add the lemon juice, 4 tbsp of soy sauce and balsamic vinegar. Cook in this way, mixing for 3 to 4 minutes. Mix the starch in cold water and add. Return the chicken and cashews and cook for another 5 minutes over medium heat. Taste and adjust the seasoning. Serve with rice.
