Hometown Chicken Soup

INGREDIENTS
1 kg Chicken – Cut into pieces (You can use whole chicken or boneless chicken as you like)
5 gr Shallot – Slices (about 10 pieces medium shallot)
3 gr Garlic – Chop (about 3 pieces)
300 gr Carrot – Cut into pieces
300 gr Potato – Cut into pieces
200 gr Cauliflower – Cut into pieces
2 pieces Leeks – Cut
2 pieces medium Tomato – Cut
Some Celery
1 Nutmeg – Shredded
4 pieces Cardamom
½ Teaspoon White Pepper
2 Teaspoon mushroom broth
250 ml Water
2-3 Tablespoon Vegetable Oil
Some Salt
1 Lime for serving
INSTRUCTION
- Heat the oil, put in the slices of shallots, fry over a medium heat
- Separate some of the fried onions keep aside
- In fry pan put in the garlic and white pepper, stirring
- Add the chicken, sauté until slightly browned over high heat
- Put in the water, cook until it boils, then lower the heat
- Put in the potatoes and carrots, stir, then add the nutmeg and cardamom
- Add the mushroom broth, stir, then put in the tomatoes, leeks, celery and cauliflower, cook for about 5 minutes
- Hometown Chicken Soup is ready to be served with fried onions and limes
