For a 30 cm cake

Ingredients

  • 300g carrots
  • 250g ground almonds
  • 180g of sugar
  • 4 eggs
  • 70g of flour
  • 1 sachet of baking powder
  • the juice and zest of half an organic lemon
  • 1 pinch of salt
  • marzipan carrots

For the frosting :

  • 200g icing sugar
  • 4 to 5 tbsp lemon juice

Directions

  1. Preheat the oven to 180 ° C. Mix the egg yolks and sugar in a container with a whisk until the mixture turns white.
  2. Put the egg whites in another large container with a pinch of salt.
  3. Peel and grate the carrots finely until you get 300g (using a food processor for example). Add the carrots to the egg yolk and sugar mixture. Mix with a spatula. Add the almond powder. Mix. Grate the zest of the half lemon and squeeze the juice. Add and mix.
  4. In a container, mix the flour and the baking powder and add to the appliance. Mix well.
  5. Beat the egg whites until stiff using an electric mixer or a food processor. Gently incorporate them into the appliance, lifting the mixture with the spatula (do not turn vigorously).
  6. Butter and flour the cake pan or cover it with parchment paper. Pour the appliance.
  7. Bake for 50 minutes in the middle of the preheated oven. Take out, let cool and unmold.
  8. Prepare the icing: mix the icing sugar with the lemon juice so as to obtain a fairly firm dough, but not too much, to be able to spread it. Using a pastry brush, coat all the cake.
  9. Then immediately drop the marzipan decorations. Let the frosting harden for a few hours at room temperature and enjoy!

This Carrot Cake can be stored at room temperature for a few days and still delicious, don’t forget to wrapped in aluminum foil.
