Cherry Chocolate Almond Cake

Ingredients

8 oz dark chocolate (70% or greater), broken or chopped into small pieces
1 tbsp smooth unsalted / almond butter ( TRY : Artisana Organics Raw Almond Butter)
1 cup / large flake rolled oats
1/3 cup raw unsalted almonds, chopped
1/3 cup dried unsweetened cherries, chopped

Preparation

1. To a large heat-proof bowl over a pot of gently simmering water, add chocolate and almond butter. Stir occasionally for 2 to 3 minutes, until chocolate is melted. Remove from heat and stir in oats, almonds and  cherries.

2. Drop mixture by rounded teaspoonful onto a large parchment-lined baking sheet, forming 20 mounds. Place sheet in the refrigerator until set, 20 to 25 minutes.

Chocolate Clusters with Cherry and Almonds

Essential Components

Slice up 1 cup roasted almonds
About ½ cup dried cherries, minutely chopped
Finely chopped 6 ounces of chocolates

In a bowl mix and toss the essential components. Lay a baking sheet with a wax sheet. Melt away half of the chocolate in a boiler over the lukewarm water. Make sure the entire cooking is done within a low range of heat. Now, take away the boiler from the heat and start swirling rest of the chocolate.

Remove the lower part of the boiler filled with chocolate in it. Take time after you wipe the base of the vessel and keep the thing to the side until the ingredient inside cools down for the moment. The next you need to do is change the hot boiling water in the bottom pan and pour hot tap water. This way the temperature remains optimum for the chocolates to cool down. Now start up yourself with clusters. Pour chocolates in the bowl filled with dried fruits and nuts and place the clusters onto the pieces of baking sheets and keep them inside the refrigerator
