DUMPLING with PRAWN and JICAMA FILLING

 

dumplingChristmas and New Year eve is almost come. Almost 2 years we can not join with our family to celebrate. I think it now the time we can gathering together in this year. A big meal must be ready to serve. Now I’m sharing one recipe that you can add to your recipe list for this big season. You can try it now for that big day

 

INGREDIENTS FOR FILLING

300 gr Shrimp, peeled (divide two parts, a half minced and whole shrimp about 15 pieces)

100 gr Jicama, minced

1/2 Tablespoon Ginger, minced

3 Cloves Garlic, minced

1 Tablespoon Fresh Chive, finely chopped

1 Fresh Carrot, minced

1 Tablespoon Oyster Sauce

1 Tablespoon Tapioca Starch/Cornstarch/Potato Starch

1 Tablespoon Cooking Oil

1 Teaspoon Sesame oil

1 Teaspoon salt

A Pinch Sugar

A Pinch White Pepper

 

INGREDIENTS FOR WRAPPER

50 gr Wheat Flour

50 gr Tapioca Starch (Can be replaced by Cornstarch/Potato Starch)

1 Teaspoon Salt (as you like)

100 ml Boiling Water (Use gradually as you need don’t too wet)

 

INSTRUCTION

Prepare the filling, combine whole shrimp, minced shrimp and all the other ingredients for the filling in a mixing bowl keep aside place in the fridge.

Make the Wrapper

Mix all the wrapper ingredients except hot water in a mixing bowl, and stir evenly.

Pour boiling water gradually as you need don’t too wet.

Stir using a pair of chopsticks and knead until smooth, and soft dough.

Divide the dough into 15 equal pieces. Shape the dumpling wrappers patiently.

Lightly coat the working surface and the rolling pin with oil.

Make a circle form by using glass or else.

When it looks smooth, soft, slightly elastic dough, you can start wrapping the dumplings straight away no need to rest the dough, it make your dough texture changed and your dumpling fail.

Now assemble the dumpling.

Place a spoonful of filling in the middle of a wrapper including one whole shrimp.

Hold with both hands. Fold the far side of the wrapper by pressing with the index finger of one hand.

Push the near side of the wrapper forward with the thumb of the other hand. Seal all around to make a crescent shape.

Heat your steamer pan and coat the basket with oil or pieces of vegetables and then place your dumplings on top of each piece, this is to avoid sticking. Dumplings are not sticky, easy for you to pick them up.

Place the basket in when the water is boiling, cook over medium heat for 6 minutes.

Dumpling with Prawn and Jicama Filling ready to serve with vinegary sauce if you wish.
