100g light brown sugar
1 tbsp sugar
1 tbsp chilli powder
1 tbsp paprika
1 tsp cumin, ground
1 tsp cayenne pepper
1 tbsp garlic powder
1 tbsp mustard powder
1 tsp salt
1 tsp pepper
1 kg/2.2lb chicken wings
For the sauce
200g ketchup
100g light brown sugar
100g cider vinegar
1/2 orange, juiced
1 garlic clove, finely diced
1 tbsp butter
Method :
- Preheat the oven to 170°C/340°F.
- Whisk together the ingredients for the dry rub and rub it all over the chicken.
- Place them evenly on an oven tray and bake for around 45 minutes.
- Meanwhile, add all the ingredients for the BBQ sauce into a saucepan and bring it all up to a boil. Allow to bubble away for a few minutes until thickened.
- Take the chicken out of the oven and brush with the sauce then pop back in for a further 10 minutes.
