Soft and Delicious Potato Cake

Ingredient
- 250 gr Potato
- 1 egg
- 125 gr Sugar
- 125 gr All Purpose Flour
- 50 gr Butter
- 60 ml Coconut Milk
- 1/2 Teaspoon Vanilla Extract
- A Pinch of Salt
- Raisin for topping (You can use your favorite topping as you like)
Instruction to make this Soft and Delicious Potato Cake
- Peel your potato, wash and cut into small pieces boiling over medium heat about 5 minutes (you can also steam or bake your potato)
- While potato still hot mash your potato add sugar, butter, and salt. Mix well altogether.
- Add the flour, vanilla extract, sugar and coconut milk. Mixed well.
- Add 270 ml water mixed and strain for softer results.
- Preheat your pan over small heat (I use muffin pan)
- Now bake your cake about 2 minutes, add the raisin as topping. Bake more minutes until cook well. It smell very good.
- Your cake ready to serve, enjoy.
In Indonesia this cake called “Kue Lumpur” means ‘mud cake’. It cause this cake is very soft. This potato cake is usually served for thanksgiving events.
