Ingredients for Healthy Green Ester Cake :

For the turban cake :

  • 300 grams of white caster sugar
  • 250 grams of butter
  • pinch of salt
  • 2 organic lemons
  • 5 eggs
  • 1 teaspoon of green food coloring
  • 50 grams of sour cream
  • 300 grams of self-rising flour (*)

NB. (*) : You can also use 300 grams of normal flour + 3 teaspoons of baking powder.

For Topping :

  • 150 grams of powdered sugar,
  • 1 tablespoon of warm water,
  • few drops of green food coloring, for example PME Juniper Green ,
    hand dragee chocolate eggs in various colors.

Directions :

  1. Preheat an oven to 150 degrees (135 hot air. Grease a turban shape with baking spray and set aside.
  2. Beat the butter, sugar, salt and grater of the 2 lemons soft and creamy with a mixer. After more than 5 minutes beating, add the eggs one by one: Only add the next egg when the previous one has been completely absorbed during the beating. Then drip through the dye for a beautiful green colored batter.
  3. In the meantime, squeeze 1 grated lemon. Save the other for making the glaze. Add the lemon juice and the sour cream to the batter and keep whisking. Finally, add the flour in two parts. Then turn off the machine and scoop the batter into the turban shape.
  4. Put the green Easter turban in the oven and bake for 45-50 minutes. Allow to cool in the mold for 10 minutes and then tilt upside down and continue to cool completely on a rack.
  5. To make the icing, mix the icing sugar with 1 tablespoon of lemon juice (from the remaining lemon), 1 tablespoon of warm water and a few drops of green coloring. Stir well and spoon this over the top of the turban.
  6. Feel free to let it run down the side. Drain well for a few minutes and move the Easter turban to a large plate or pie plate.
  7. Before the enamel completely hardens, it is best to decorate the top with a few (small) dragee eggs. If the frosting dries up, they are immediately stuck in the cake. Divide the rest of the eggs around the turban.
