Basic Ingredients;
1 Kg Flour
750 gr Room Butter, Softened
150 gr Granulated Sugar
150 gr Grated Cheese
100 gr Milk Powder
75 gr Cornstarch
5 Egg Yolks, keep the white for icing sugar
2 Teaspoon Baking Powder
1 Teaspoon Salt
How to Make 7 Christmas Cookies from One Simple Dough and 1 kg Flour;
We start with the Dough,
Mix the dry ingredients (Flour, Milk Powder, Salt, Cornstarch and Baking Powder) in a bowl, stirring well and sifting. In another large bowl, soften the butter with sugar using a spatula. Add the grated cheese and egg yolk gradually until well mixed. Pour dry ingredients gradually until well mixed, divide the dough into 7 parts. Cover with paper keep it cool in fridge.
Tips;
Remember not over mix the dough, this will help to prevent the dough from spreading excessively if you prefer to bake some or all of the cookies later.
1.Christmas Icing Sugar Cookies
- Make Icing Sugar from white egg beat with sugar and some lemon juice. beat until thick, divide and add food coloring as you need keep aside in fridge.
- Print the dough as you like, and bake at 140°C for 30 minutes
- Let it cool and you can add the topping as you need.
- After set, store in an airtight container
2.Thumb Print with Pineapple Jam Cookies
- Make a small ball, and print your thumb.
- Add some pineapple jam on top, and bake at 140°C for 30-40 minutes
- Let it cool and store in an airtight container
3.Snow White Cookies
- Prepare some Granulated Sugar as snow.
- Take the dough Print the dough as you like, and bake at 140°C for 30 minutes
- Let it cool in tray and you can sift granulated sugar on top.
- After set, store in an airtight container
4.Cheese Cookies (Kastengel)
- Prepare Grated cheddar / parmesan cheese. If using grated Cheddar, keep the grated Cheddar in the fridge for 2-3 days, unopened, to let it dry.
- Topping, 1 egg yolk, ½ tbsp milk and yellow food coloring, as needed.
- Roll the dough to a thickness of ±0.5 cm.
- Slice the dough to a length of 5 cm or to your preference.
- Brush with the egg wash and milk and sprinkle with grated cheese.
- Then, push the cheese in with a scraper / spatula so it sticks.
- Slice the dough as wide as ±1 cm or to your preference. Make sure the size and width are uniform.
- Transfer the sliced dough to a tray with a baking paper on.
- Space them evenly and bake at 140°C for 40-50 minutes, depending on the size.
- After they cool down, store the Kastengel in an airtight container.
5.Chocolate Chips Cookies
- Prepare some chocolate chips for topping.
- Take the dough, make small ball print line by fork on top.
- Add some chocolate chips on top and bake at 170°C for 30 minutes.
- Let it cool in tray and store in an airtight container
6.Chocolate Chips Cookies
- Prepare some chocolate chips for topping.
- Take the dough add a teaspoon chocolate powder mix well.
- Make small ball print line by fork on top.
- Add some chocolate chips on top and bake at 170°C for 30 minutes.
- Let it cool in tray and store in an airtight container
7.Pineapple Jam Ball Cookies (Nastar)
- Prepare pineapple jam as filling. You can make them in to small ball and keep it cool in fridge.
- Also prepare topping from 1 egg yolk, ½ tbsp milk and yellow food coloring, as needed.
- Take the dough make a small ball and add the pineapple jam ball on it, and bake at 170°C for 30 minutes
- Take out from the oven apply egg yolks on it (topping)
- Bake again about 10 minutes
- Let it cool down completely in tray and store in an airtight container
