Mascarpone Italian Cake Recipes
This Mascarpone Italian cake recipe is meant for a 24-26 cm springform and about 12 people. There are hundreds of variations of themas carpone cake, but this is the great “Numero Uno” !!!
Mascarpone is an Italian cheese made from light cream with the addition of tartaric acid, making it a creamy and spreadable product,ideal for making tiramisu or a cake.
Mascarpone Italian Cake ingredients :
- 1 packet of crumb dough
- 250 grams of mascarpone
- 200 grams of yogurt
- 40 grams of sugar
- 3 tablespoons lemon juice
- 3 sheets of gelatin
- 750 grams of strawberries (or other fruit, such as raspberries or use chocolate or nuts, such
- as walnuts or pecans)
- 3 tablespoons strawberry jam (or other fruit)
Preheat the oven to 180-190 degrees. Coat the cake pan with butter and dust with a little flour so that the cake base comes off easily. Roll out the dough and put it in the mold, cut off the edges of the dough.
Pierce the bottom several times with a fork. Put baking paper on it and something that can withstand the temperature of the oven, so that the baking paper stays in place.
Bake the cake base for 10 minutes in the middle of the oven, so that the cake base is cooked evenly everywhere. Remove the baking paper after 10 minutes and leave the pie bottom in the oven for another 5 minutes to turn a nice brown.
Remove the cake pan from the oven and let it cool. Mix the mascarpone with the yogurt and the sugar. Soak the gelatin in cold water, squeeze it and dissolve it in the warm lemon juice. Stir it into the mascarpone mixture. Spoon the cream into the cake and smooth it out with a spatula.
Put the mascarpone cake in the fridge and let it set for a few hours. Remove the cake from the fridge and cover it with half strawberries, other fruit, nuts or chocolate.
You can pour the heated jam over the strawberries, or heated chocolate over, for example, the nuts. You can vary endlessly with this.
