These Original coconut mousse cake is perfect for a dessert, everybody will love it !

Ingredients :

  • 4 eggs
  • 30 cl coconut cream
  • 250 g sugar
  • 70 g rice flour
  • 70 g potato starch
  • butter for the mold
  • 30 cl liquid cream
  • 90 g grated coconut
  • 2 organic limes
  • 3 c. cane sugar syrup

Directions :

  1. Wash, dry, then grate the lemon zest, squeeze the fruit. Mix the lemon juice with cane syrup and 3 tsp. water. Heat the set.
  2. Preheat the oven to 180 ° C. Whisk the eggs with 120 g of sugar, the mixture should blanch and double in volume. Add the flour and starch. Pour the dough into a buttered pan and bake for 30 minutes. Let cool.
  3. Whip the whipped cream, with the coconut cream and the remaining sugar. Add the grated coconut . Reserve 10 minutes in the fridge. Cut the cake in half, soak the inside of the lemon syrup discs.
  4. Spread two-thirds of the foam on a cake disc and place the second disc by pressing gently. Cover the cake with the rest of the mousse and sprinkle with lemon zest. Reserve 3 hours in the fridge before tasting.
